Not worth the money

This sharpener is overly complicated for the results. It's bigger and harder to use than one of those little $6 carbide/ceramic two stage V-sharpeners, and the results are no better. This sharpener does work pretty much as advertized, but you can get as good or better results with a little pocket V-sharpener, for about $35 less. One advatage of this sharpener over a simple V sharpener is that it does put a double bevel. This is a technique of sharpening where the main blade bevel is, in this case 20 degrees, and the honed edge is at a slightly wider angle, 24 degrees in this case. Ideally this gives a more durable edge and allows you to re-sharpen with just a quick hone. Even with this fact, and the compulsion I'll have to use it just because I spent $40 on it, I don't see myself using this over my pocket V-sharpener.

This will turn a butter knife into a steak knife in no time. The first sharpening may require many passes but touch ups are done in seconds. I gave everybody on my gift list one of these last Christmas.

Very nice, but expensive

The 2100 is the top-end commercial version of the Chef's Choice electric sharpeners. According to the manufacturer (EdgeCraft) it is intended for "busy commercial kitchens." It is a bit larger (about an inch in each dimension) and heavier than the consumer models but still compact enough to leave on the counter top. The sharpening module is removable. It can be run through a dishwasher; therefore, if you sharpen a dirty knife, you can clean the sharpener. You can also purchase replacement sharpening modules. I purchased this for home use, so I will compare it to the consumer models and comment on the price. The 2100 uses a 3-stage sharpening system. The first two stages use diamond abrasives and the third stage uses flexible stropping disks. You can achieve several edge configurations by using or skipping certain stages. There is good information available on the Chef's Choice Web site ([...]) that I won't repeat here. The sharpening unit itself appears to be about the same size as the consumer versions. The sharpening stages are like those on the M120 consumer model. Both have 2 sharpening stages and a stropping stage. (By comparison, the M130 has one sharpening stage, a stropping stage, and a steeling stage.) The 2100, like the other Chef's Choice sharpeners does a very good job of sharpening knives. In terms of results, you just can't beat manual sharpening -- that is, if you have the right equipment, you know how to use it, and you do use it. I have a good manual sharpening system, but it is a bit time consuming to set up, so I tend to do it only when I have several knives that need sharpening. The result is that at any given time, I may pick up a knife that is not quite as sharp as I would like. With an electric sharpener on the counter top, I can give a knife a quick touch up whenever it needs it. The result is that all my knives stay very sharp all the time. The real question, I think, is whether the extra cost is justified for home use. Roughly speaking, the 2100 is four times the price of the M120 or M130. In fact, the cost of a replacement sharpening module for the 2100 is only slightly less than the cost of a new M120. I expect that the abrasives in the consumer units should last about as well as the sharpening module in the 2100, which is rated at 5000 sharpening cycles. If you sharpen 20 knives a week, that's about 5 years. I'd guess most people are more likely to sharpen 5-10 knives (or less) per week. That translates to 10-20 years. From an economic standpoint, it makes better sense to buy an M120 or M130 and send it back to EdgeCraft for refurbishment when the abrasives wear out or just buy a new one. Of course, there are those pesky non-economic factors. I am often willing to spend more money for something that will take more use and abuse and which is likely to last at least as long as I will. I am very happy with the 2100 as long as I don't think about how much I paid for it.

Although steels often are touted as sharpening tools, few actually sharpen knife blades, but they do perform the vital task of realigning, or resetting, edges, which bend when contacting a cutting surface or other hard object. Because this tool's rod contains microcrystalline diamonds bonded with nickel to an oval steel shaft it's hard enough to somewhat sharpen a blade. Using this steel won't replace a professional sharpening job, which proceeds from coarse grinding to ever-finer grinding at tightly controlled angles. However, it will lengthen intervals between sharpenings better than a steel without diamonds because it accomplishes the final task of a professional sharpening, which is polishing the edge with its 600-grit mesh to a fine point. The rule is that a steel should be at least as long as the knife blade being drawn across it and this steel's 4-3/4-inch rod is short for most household knives. But, because it's 3/4-inch wide, it compensates somewhat in width for length. (Overall the tool is 10-1/2 inches long.) Lightweight and durable, the tool has a rugged plastic handle with a hanging hole, can be used for serrated knives as well as straight-edge blades, and also is useful for filing glass, crystal, and china. --Fred Brack

We needed a sharpener to take on the road. Sharp knifes are a must at the lake, camping etc. and having the large version of this diamond sharpener, we tried the small one for portability. A winner. Does the job beautifully.

Best Tool for Quick Sharpening

I have the smaller version of the this sharpener which has finally worn down after 10 years. Now I use this new sharpener for initial honing and my worn one for a final fine edge. The sharpener works very well on good kitchen knives. It is a bit rough at first but after while it will give a good smooth edge finish.

Excellent Sharpener

This product was recommended by cutlery whole sale dealer based on it "high quality". Well, they were right, the quality of the finish is superb and it produces a great edge. The medium 600 grit produces results like a soft Arkansas oil stone. The finish it leaves is very similar to the Soft Arkansas stone when examined under a 10X loupe. The diamond cuts with very light strokes and doesn't care if it is sharpening softer carbon blades or the newer hard stainless blades of quality manufactures such as Case or Buck. I have used this sharpener for years with great results. It even sharpens the razor blades in my utility knives as fast as changing the blade. This is really a top quality product that really works.
