I have been sharpening knives for over 45 years and this is the fastest, easiest way to get an excellent multi-angle edge on ALL of your knives. I orginally purchased a Model 300 about 12 years ago. The 310 is much better because it sharpens all of the way to the handle, a big issue with small blade pocket knives. If you like sharp knives and either do not have the skill or the time to do it by hand get yourself one of these.

I have had this sharpener for several years and am quite satisfied with it. When you sharpen your knives for the first time, it takes many repetitions with both wheels, but you get a very sharp edge. After "setting up" your knives with the first sharpening, you'll find it fairly easy and quick to resharpen every few months. I'd recommend it if you want to get good sharp edges but don't want to spend the extra $ for the top of the line sharpeners.

The Chef's Choice 310 is an outstanding home knife sharpener for its price. Very good value. My wife's knife are sharper now than they were when she bought them. Be sure to follow instructions on first time sharpening so the blade angles can be set.

Simple operation, very good results

I have a small collection of not very expensive knives ... chef knife, slicer, boning knife, santoku knife, assorted paring knives. Before each use, they get treated to a few strokes with a sharpening steel. Always thought they were pretty sharp. The difference after being sharpened on the 310 was very significant. The test was slicing tomatoes thinly and they all worked much better than before. Operation is simple. Felt slightly awkward on the 1st knife, but you get the feel of it pretty quickly, and once you do, the process goes very smoothly. With a product like this, who needs to spend a fortune on knives? Some time ago I bought a KitchenAid santoku knife at Walmart for ... I'm going to say ... $15. First use was a disappointment and it's been sitting idle since. Ran it through the 310 and now it's a winner ...

If you're anything like us, you probably spent a lot of money on your knives a while back but secretly ask yourself "why did I bother?" because they just don't special anymore. That's because they've never been as sharp as when you bought them - something this gizmo can DEFINITELY change.This is a superb knife sharpener - Cooks Magazine rated the Chefs Choice absolutely the best electric model. It puts the kind of edge on your old knives that makes you realize you'd forgotten the true meaning of "sharp". There's only one flaw in their basic model, though. If your knives have gotten very dull, or you want to be a hero once in a while and put a better-than-new edge on a friend's knives, buy the model 110 instead. That model adds a heavier "grinder" blade (seen on the far left of sharpener in the picture) that can take off more metal quicly while creating the basic, third bevel on their "trizor" edge. Once you have that 3-beveled edge, touch-ups with the lighter grinding wheels seem to keep the knife sharp indefinitely.You never need this more than once for all but the most neglected knife, but when you do it's nice to have. I've used it to sharpen a cheap fish fileting knife we bought while camping that turned out to be so thick and dull you could barely cut cheese. Now you could shave with it...

If you have good knives and are clumsy, you need this!

I've been using the Chef's Choice for years now. I still use the one I bought in 1992 almost daily. My knives are still in wonderful shape and hold their edges beautifully.The guesswork has been taken out of knife sharpening with this machine. I'm only so-so with a steel and in any case, a steel can't do the three stage sharpening that the Chef's Choice does. Since it holds the knife at the perfect angle for each step, it makes it easy for the fumble-fingered (like me) to create a perfect edge every time! I'm buying one for my daughter now, mine is in perfect condition after more than 10 years and I imagine it will be for years to come yet!I paid over 100 dollars for this very sharpener back then, which was a LOT of money at the time. They've come down so far in price that you haven't any excuse not to get one now!

Considering the price and results of this product it is a bargain. Yes, it is not for the person who considers their knives collector items to impress friends or those who plan to use their knives for cutting paper thin slices of veggies for the microscope...but it does put a good edge on a commonly used knife and does so quickly and accurately. The suction feet really keep this in place. I recommend it to anyone who cares to have a good edge on a knife and does not care if there is a slight mark a 1/4" up...I saw this as well. If you want something much better for those expensive knives then go for the over $100 units here at amazon!

All those dull old scissors I collected over the years, as they gradually lost their edge, are now SHARP. I stumbled across this product while looking for a knife sharpener. Since I was about to buy yet another pair of scissors, I decided to try it. It really put a good edge on all my shears (except pinking, nail and hair - which it does not sharpen). You have to be somewhat careful holding the blade at the correct angle, as there is a bit of wiggle room under the guide. One practice run with a cheap pair of scissors should suffice, however, and it is wonderful to have really sharp scissors again. Lots of them!

I am really impressed with this sharpener. As soon as i found out how to tell the difference between knife edge and regular shears I sharpened all of my upholstery shears and they cut like new. I recommend highly but you need to know what type of edge your scissors have and, believe me, it is not that apparent.

The Scissor Pro is very easy to use and the instructions are clear. The magnetic scissor guide lines up the blade for you. All you have to do is pull the scissor through. Not for a polished edge

I confess to being a bit of a geek when it comes to knife sharpening. I keep all of my knifes razor sharp and a box of band-aids in the kitchen for friends who are unaccustomed to working with really sharp knives. I have found the Ultimate Edge to combine the action of a medium sharpening stone with that of a sharpening Steel. Like a steel, the small area of contact with the knife will straighten an edge that has rolled over as a result of contact with something unyielding. Unlike a steel, the diamond grit embedded along its length removes enough metal to create micro-serrations in the edge. Micro-serrations are microscopic teeth raised in the edge through contact with a hard abrasive surface. The good thing about micro-serrations is they help a knife bite. For example, such a knife will slice through the skin of a tomato without slipping. The bad thing about micro-serrations is they wear away rather quickly and must be renewed frequently. Most folks who spend too much time thinking knife sharpening prefer a "polished edge" which is achieved by stropping the edge after shaping and sharpening with a stone. Stropping (sometimes called buffing) involves removing the scratches (and micro-serrations) left by the sharpening stone, resulting in a perfectly smooth edge. A polished edge is extremely sharp and relatively durable. The edge on a new razor blade is an example of a polished edge. I touch up the edges of my knives the first time I feel them slip cutting into a tomato. For knives I use every day that translates to about once a month. If you are someone who wants to maintain a polished edge on your knives - I would not recommend the Ultimate Edge (or any of the other diamond coated steels out there). For the other 99.5% of the population, this is a very useful tool to maintain your knives. With a few strokes, you can raise those serrations and have a ripping sharp knife. Do this every few uses or just before you start a task where a really sharp knife makes a difference. One final thought for those few who have made it this far. By its nature, the Ultimate Edge will create a secondary bevel (or possibly a concave bevel depending on how consistent your are in maintaining the knife/steel angle). This secondary bevel will tend to increase over time eventually reaching the point where it will affect the knifes performance. When this happens, it is wise to have the knife professionally sharpened to reestablish the primary bevel. You will know you have reached this point when you have to hold the knife at an unreasonably steep angle to the steel in order to affect the edge and/or you find it takes a large number of strokes to retouch the edge.

I purchased this Diamond Sharpening Steel from Amazon and have used it for a couple of days. It really works superb and overall performance is above all expectations. It not only realigns the edge but sharpens it as well. I.e. it removes material (steel) in infinitesimal amount that accumulates on the surface of the tool as extremely fine dust. It takes only a few effortless strokes for simple edge realignment if the knife is sharp or few minutes of work if the knife is dull. But in any case, the result is amazing! Once in a while this Diamond Sharpening Steel should be put under running water for only a few seconds for cleaning and steel dust residue flushes with water. Maintenance is simple and easy. So, whether you have cheap knives or expensive ones this tool is worth the money. The only issue I leave open is durability of this Diamond Sharpening Steel. Theoretically it should last forever but in reality it remains to be seen.

Plan on Two Years Use

I sharpen my knives every 4 or 5 uses and find that these sharpeners last about two years. They are the best you can use to get a very sharp edge, but they do wear out. Scrub with a brush and soap and you can extend life. I am ordering my third sharpener and also give them to relatives who are surprised how dull their knives were.

As easy as cutting warm butter...

Why did I ever use the elbow greese and stone methode to sharpen my knives? I recieved this sharpener as a gift. setup was easy I just pulled it out of the box made a couple of miner settings then pluged it in. In a matter of minutes I was shapening my dull kitchen knives. The sharpening action is very easy, just run the knife through the first slot a few time then through the second slot a few more and with the aid of the electric motor my knives come out sharper then when new. I've used this sharpener 40 or so times now and it still puts a fantastic edge on my knives. This sharpener would've been well worth my investment with just the time I save not having to sharpen by hand, had I bought it for myself. It does it's job well.

I've been sharpening knives since I was a kid, but got really tired of hand sharpening kitchen knives everytime a family member cut through something on a ceramic plate (seemed like daily). I was really skeptical of any motorized sharpener, especially as costly as these are, but most of the reviews were good so I purchased one. I am so pleased. Don't try to use one of these without reading the directions...they have specific steps to follow that are not always obvious, even to those of us used to hand sharpening. And, like others have said, the first sharpening takes a while in order to correct the angle of the blade. Once you're there, you feel a huge burr/curl form on the edge, then you hone, and the knife will get extremely sharp. I have a large bald spot on my arm now where I tested the knives. I really like the blade guides. They're not perfect in holding the blade, but are good enough to give you the idea of how to hold & draw the knife. Some have commented on scratch marks that are left on the sides of the blades. I got them my first try, then realized if I was more careful in holding the blade true to the angle guide, it didn't happen. As a word of warning, if you order one with a metal exterior it adds about $20.00 to the price. White plastic saves you money and doesn't have anything to do with functionality.

Goodbye whetstone...almost!

...and that is purely because I am a traditionalist when it comes to sharpening knives. I spend a lot of time outdoors and sharpening a knife the old fashioned way is an essential skill for every man...and sadly maybe for the woman whose man won't develop the skill. Even during a stint in the deli and meat business for 9 years, I stuck with the old methods. As often as I had to sharpen knives, only occasionally and with a lot of work was I able to get our knives really razor sharp. Other times, they were only just pretty sharp! Many people don't realize that the most dangerous utensil you have in the kitchen is a dull knife. A dull knife requires more force to do the same work. Dull knives are more susceptible to slipping and combined with the force that moved them, can still produce chilling and even life threatening accidental cuts. A sharp knife requires much less force, can cut more precisely and is easier to control. I bought this device for my son and daughter in law for Christmas 2008. They owned excellent quality knives, but they were sharp only for the first few months after they bought them. After that, I discovered they may as well have used a butter knife because that's the condition these knives reached pretty quick. The knives also suffered from the very bad habit of being stored loosely in a drawer. Consequently they had nicks in addition to just being dull. I was afraid that my daughter in law would end up with a nasty cut. The situation got so bad that instead of sharpening the dang things, my daughter in law would just buy a new knife each year! I used this device for the first time just last week only because I remained as stubborn about my son learning how to use it as I did about my own traditionalist methods. He and a buddy tried using it...without looking at the instructions... and didn't get anywhere with it. I learned very quickly that had I been smart, I would have bought one of these machines for ourselves when we started our deli business in 1994 !! It is important to read and follow the instructions to get the best service from this machine. Starting with the dullest 10" knife and using only the weight of the knife, I drew the knife blade in 10 alternating passes. This very quickly produced the burr sought in the instructions for stage 1 along the entire length of the blade. (Normally, a knife in better condition would need only a total of 2-4 alternating passes to produce the same result.) After reaching the burr stage, only 4 alternating passes (2 on each side) in stage 2 produced an edge on this knife that I could use to shave the hair off the back of my left index finger! I gave that knife one more stage 2 pass for each side and went on to the next knife. This time fewer passes...same results! My daughter in law gave it a shot with another dull knife that would only smush a tomato and produced an edge in only seconds that would cut tomatoes paper thin! She also got razor sharp results on a short bladed paring knife! Once a knife is this sharp, the machine won't be needed for quite a while. Generally, only a pass or two with a high quality ridged sharpening steel such as those offered by Forschner or Mundial will be enough to maintain the edge for months of household kitchen use. This is because the edge of a razor sharp knife becomes so thin that it will "fold over" in the shape of a J during use. The steel straightens the edge and restores it's razor sharpness with just a few VERY LIGHT strokes. The vision you might have of the butcher flailing his knife 10-20 times with the steel to restore the edge is really overkill and mostly for show. The two light strokes should do it...and as quietly and lightly as possible. I have even used the bottom of a ceramic coffee cup or the back edge of another high quality knife in place of a sharpening steel, although the coffee cup will remove some material from the blade of the knife. In just minutes with this machine, we had 8 razor sharp knives and accomplished what could have literally taken HOURS to achieve with traditional methods. If you are not getting the same results with your machine, my humble guess would be that you are not using it properly. the steel in your knife is very hard or they are in really bad shape. Only as a last resort would I fault this machine. We were even somewhat saddened when we were done! Remember to store your knives in a way that keeps them banging against each other. We prefer wood blocks designed for storing knives. They can get pricey if you buy them retail. We managed to pick ours up at Goodwill for $2....a real bargain. They have them every time I go in there.

Inexpensive dummy-proof sharpening

Bought one of these recently to replace an older model that had been well-used. (These do need replacing every once in a while, as the diamond grit wears down.) Thought I'd share some tips here. First, let me point out that the turning wheels in the center are a guide to make you hold the knife upright. The wheels may not be turning throughout your "swipe" if you are using a thin-bladed knife. Second, you should use a feather-light touch when "swiping." The cutting edge of the knife is very thin, and you do not want to push it down in the groove and damage it. Use a long, sweeping stroke, light and smooth. Third, to get the best use of this sharpener, every so often you'll have to clean out the metal dust that collects in the grooves. If the bottom of the groove is silvery-shiny when you look down at it, take a small, stiff, clean brush and whisk the groove until the original gray appears again. I believe that the two slots on this sharpener correspond to the last two (and most gentle) slots on the manufacturer's three slot electric sharpeners. Thus, the first slot sharpens and the second slot hones. The first slot won't be used as often as the second slot. The edge you get with this gizmo probably won't be as nice as the edge you'd get from an expert hand on the whetstone, but it will keep the family kitchen knives cutting well for many years.

I work in a major hotel and everybody comes around to use my sharpener. Now I have to order sharpeners for some of the crew. We use to have a guy who used the oil/water stone. But this one is easier, faster and dummy-proof. It puts such a sharp edge on my knives I find myself sharpening knives for my family too. I bought it over a month ago and it still does a fantastic job. I have to have a sharp edge in order to get my work done faster. I can't recommend this toy enough. It's a great investment.

I'm an avid semi-professional cook/chef and have an extensive collection of knives and sharpeners, including an electric Chef's Choice. I bought this sharpener as a gift and had to try it out first (against my wife's express order). I sharpened one serrated and one regular knife just to see if this would do a good job. Today, I'm ordering another one to send as a belated Christmas gift to my son since I kept the one I tried out. If you need a sharpener, buy this -- you will not be disappointed. It's easy (fool-proof!) to use, doesn't take up space, and puts on a razor-like edge in seconds (OK, maybe a minute or two). If your knife has a decent edge already, it hones with just a few strokes. This is a winner.

I bought one of these for my mother in law as a Christmas present. Her knives were so dull that you couldn't cut hot butter with them. After a few strokes, what a differece. Her knives sliced thru a ripe tomato with ease. She has trouble using the simplest of tools(she refuses to read or follow directions), but this was so easy, even she could sharpen her knives with ease. I was so impressed that I bought one for my self. I keep an edge on my good knives, but this helped with some of my old knives that were beyond using on a steel. I definitely recommend this product.

We bought this sharpener (Model 460 Chrome finish) after getting some good feedback from friends and the fact that it can do both regular and serrated knives. We also looked at the pricier electric sharpner (Model 110) from Edge Craft (Chefs Choice). But we settled for this one since we felt we would use this at the most once or twice a month. When we got the 460 we were surprise that it is made of platic and very light. But the chrome finish is good. I followed the instructions and got very good results on my Henckles knives. Also tried a serrated bread knife and results were good.

I have never taken the time to write a review but this great product deserves all the attention it can get. AnySharp really lives up to its claims. I have owned every knife sharpener from a grinding wheel, oil stone, electric sharpeners diamond and otherwise, as well as an assortment of hand held devices which are all retired now that I have AnySharp. It is safe. It is fast. It can make a cheap super market knife cut like an expensive German knife. Yes the cheap knives may not hold the edge as long but with AnySharp you can restore the edge with a couple of strokes. I have restored old knives to service with this sharpener. It also reaches and sharpens the entire blade better than wheeled devices. I just wish I owned the company or at least a couple more sharpeners for the camping and fishing.

Small but Powerful little sharpener!

Well I have to admit, I was pretty skeptical about this little device given how tiny it was. But, given the price point, and the so-far perfect reviews, I decided to give it a whirl. I have several Global and Henckels knives that I received as gifts a couple of christmases ago, and sadly, as much as I cook and have a variety of kitchen devices at my disposal, I neglected to really maintain the knives themselves and they ended up to the point that they couldn't even adequately slice a ripe tomato. My knives were in pretty bad shape I'll admit. I ended up having to pass the knives about 10-12 times each to really restore them to sharpness unlike the package's recommended 3-4. Nevertheless, they were restored to working order, even the serrated Henckels ones! That has always been the major obstacle to me picking any other sharpener is that most of them don't work well with serrated knives. I can say with certainty that this puppy certainly performs well with Serrated knives just as well as my smooth-blade Global knives. Cleanup is minimal as well, the shavings carved off are minimal and a quick shake of the device will shake out any shavings that remain. What really struck me about the device is how tiny it is! Seriously, this thing can easily fit in any kitchen drawer, even the messy ones! I'd wager it's about the size of a 1-cup Pyrex measuring cup, slightly smaller I'd say. Overall, this is a solid product top to bottom. It really feels well constructed and so far the performance is really exemplary.

I needed a decent sharpener for my Global knives, and didn't want to spend a fortune. I figured, for $14, not much to lose. Well, the little sucker sticks right to your countertop, works great without having to drag out an instruction book every time (like my last Global sharpener with wheels, water, smoke and mirrors), and my Global knives are slicing thru tomatoes like they did when they were born.

Chef'sChoice 464 Pronto Manual 2-Stage Diamond Hone Knife Sharpener I've had some good quality German cutlery for over 25 years. However, the 'factory' sharpening steel wore out long ago. I replaced it with a 'diamond' type sharpening rod, however, I just couldn't seem to produce the type of edge I really wanted and needed. Furthermore, after purchasing some new knives that had poorly ground edges, which didn't cut like I knew good quality knives should cut, I decided to reseach various sharpeners on-line to see if I could find a reasonably priced, good quality sharpener to help me get my knives "back into shape". That's when I came across this one. Even though no reviews had been given on this model yet, I purchased it because I liked the fact that the manufacturer specialized in cutlery sharpeners (of many different types) and that this manual sharpener specified it used diamond sharpening wheels that could sharpen serrated knives as well. The night it arrived at my house I went to work... I resharpened every knife I had in my kithcen (Cleaver; filleting knives; serrated bread knives; 6", 8", 10" cook knives; specialty meat slicing knives; boning knives; and so on...). I began with the dullest of my knives to see just how well the sharpener would work on a knife with a poor edge. Well, it took a few trys and some additional re-reading of the instructions for me to get the feel of the sharpener and to produce the results I desired. The "bottom line" is... this sharpener will do just what the manufacturer says it will do. Those 28 year old German knives are, once again, in daily use - right along side with my newer knives. I'm very pleased with my purchase... I also like the compact size of this sharpener which makes it easy for me to take it wherever want, and that it stores conveniently in one of my kitchen drawers (also, I don't need electricity to make it work).

Cooks Illustrated gave this sharpener a very strong review (their best-of-class as I recall) and I reluctantly laid down my trusty sharpening steel to give it a try. Once I got this special 3-beveled edge on our knives I never regretted the decision to switch. What's particularly nice is that the edge returns so easily with a quick touch-up on the finest setting.I've also notice virtually no obvious loss of metal on the knives after many touch-ups, a problem with other sharpeners that can quickly consume your blades. If you want an edge that makes you feel more like a surgeon than a chef, this will deliver.[The only downside is that it's no good for serrated knives, but their newer model 120 will handle them too.]

This is a wonderful knife sharpener; I'm very impressed. I've been a stickler for sharp knives all my life, yet had fallen by the wayside due to the "no time!" syndrome.A few minutes per knife with this thing returned them all to razor sharpness, and 60 seconds per knife keeps them sharp. It even made our one cheapo knive, normally relegated to the back of the drawer, masquerade as a surgical instrument ready to tackle tough-skinned tomatoes.Highly recommended.

I'm a hunter and a fisherman (mostly fisherman) and have had a devil of a time over the years keeping fillet knives sharp. In order to fillet a fish, a knife sharp is everything. I used the chef's choice sharpener on my fillet knives and it got them almost razor sharp. Encouraged, I went and sharpened all the kitchen knives and the box full of pocket knives that I have received for birthdays and so forth over the years. I have nothing but good things to say about this product. Highly recommended!

A must for every kitchen - you can't cook with dull knives

This little 'gadget' will transmogrify the dullest, bluntest knives in your drawer into razor sharp slicers and dicers. I didn't believe it really could; I bought it because I was ready to try anything cleaner than oil and stones - even my diamond hone could not refurbish abused blades to my satisfaction. This machine fixes the problems of those ratty sharpeners on the backs of can openers, the messy and oily hones, the ineffective and tiring ceramic 'V' contraptions - and the user errors. The slots align the blade to the correct angle and keep it that way - the user just stabilizes the knife handle and keeps the blade from running through too quickly. It is that easy! The stages run from coarse grit (for horribly dull blades that you used to cut branches in the garden last summer) to extra fine (to finish the edge or re-align the blade edge after use). Even my cleaver is sharp enough to cut joints instead of bludgeoning the entire beast into submission. Best of all, it sharpens quickly; it is no longer a messy, all day chore to get sharp knives. The only down side is that the sharpener is hard to use on short blades or scissors - although it can touch up the tips of straight-edged snippers. Once you get your blades in shape, keep this machine handy so you can maintain those desirably sharp edges. You can do it!

Ideal Electric Sharpener

This is my first electric sharpener. I saw the brand in a Cook's Illustrated review and was persuaded by that and the comments of others here. There is a new, more expensive model but I feel that this one is ideal for my use. The instructions are good and explain the sharpening technique well. I picked up the knack of letting the magnet guide the knife and managed to get the pull speed right too. The result is very sharp knives. The unit is sturdy and sits firmly on the kitchen surface. There is noise from the motor - a whir - and the grating sound as the knife is sharpened. Neither are excessive or troublesome. Highly recommended.

I am a personal chef and caterer and use my Asian Shun Kershaw knife 6 to 8 hours a day, 6 days a week. Of course that will dull any blade and so far the only good solution was for me to send my knife back to the factory every 6 months to be re-sharpened. Losing the use of my knife for 3 weeks was never fun; I do have a replacement, a Victorinox Fibrox chef knife, but it is not quite same. So I tried a sharpening stone, the kershaw electric sharpener (mistake, I had to send the knife to the factory right after using that), the Wusthof santoku sharpener (not effective enough), a diamond coated steel, built a wood stand for my sharpening stone at the required 15 degree angle (that worked pretty well). And then I found this. I have used it and it is wonderful! The blade is back to factory sharpness and it is very easy to use. Plus I can use it to hone the knife everyday before using it to maintain the edge. My search is over! Thank you Chef's choice. To my knowledge it is the only easy to use sharpener on the market that works for Asian knifes.

I have never had any luck with manual or electric knife sharpeners and was hesitant to try and sharpen my expensive knives on one only to have the edge completely trashed, which has happened. However I have been without the use my santoku for too long and decided to purchase this item. I didn't expect much, however it was recommended by cook's illustrated so I figured I would give it a try. I got it today and tried it and was amazed at how it put a razor sharp edge on all my dull knives. I highly recommend this product to anyone with Asian style knives that need a good sharpening.

This electric sharpener is so simple to use that knives practically sharpen themselves. It puts a professional-style edge on any kitchen or sporting knife (except serrated knives). Because magnetic guides hold a blade at the proper angles, no guesswork is involved. You simply grip your knife loosely and pull it lightly through the sharpener's slots without pressing down. Key to this knife sharpener's performance is the two different stages: the sharpening stage and the second honing stage, which polishes the blade to a razor edge. Those two stages create different bevels, putting a "shoulder" on an edge instead of sharpening with a single bevel. The shoulder strengthens the edge so it lasts longer. For each stage there is a pair of slots, and the slots use 100 percent diamond abrasives for hardness. I have Chicago Cutlery knives. First I used the Steel that came with the knives. After about 3 years, the knives would not sharpen very well. Then I got a "set" that used 4 ceramic rods to sharpen the knives. They did a very good job, but it was a LOT of work. After using that set for about 5 years, I tried a real "cheapy" electric sharpener and returned it after one use. It just did not sharpen. -- Back to the rods. I finally decided to give the 300W a try. It works just great. The knives get much sharper than any other method I have tried and they stay sharp much longer. For my purposes, this is an excellent sharpener.

After investigating knife steels, oil stones, water stones,and various gadgets this sharpening device is truly a "Chef's Choice". It is easy to use, requiring only a light touch. It does a great job in sharpening your knives and does not take a long time. Another benefit is the price and better still the immediate savings when you buy the Chef's Choice 300W Diamond Hone Knife Sharpener from Amazon. This purchase will NOT CUT into your wallet !! My Henkels and Sabatiers have nice sharp honed edges. Now I think I need to buy a new cutting board.....

Several reviewers have complained that it takes a long time to sharpen knives with this gadget. Perhaps, but compared to using a whetstone, the Chef's Choice 300W is blazingly fast. Properly done, sharpening knives does take time. Moreover, it is vital to break in knives exactly as described in the literature that accompanies the sharpener. Other reviewers have said that the sharpener does not perform well on hard knives, but I am using it on hard stainless steel knives and getting a good, sharp, long-lasting edge. I repeat: to obtain optimum results, it is important to read and follow the instructions that come with the product.

I just received it, read the instructions and then sharpened six knives in about 15 minutes. The first sharpening takes longer because the knife edge must be reground to match the sharpener. I have another Chef's Choice with three stage sharpening which adds a grinding wheel and makes the first sharpening go very fast. It is over 10 years old and is still going strong. I rarely use the grinding wheel so decided this version is more practical and much less expensive. I highly recommend this excellent sharpener.
