Not worth the money

This sharpener is overly complicated for the results. It's bigger and harder to use than one of those little $6 carbide/ceramic two stage V-sharpeners, and the results are no better. This sharpener does work pretty much as advertized, but you can get as good or better results with a little pocket V-sharpener, for about $35 less. One advatage of this sharpener over a simple V sharpener is that it does put a double bevel. This is a technique of sharpening where the main blade bevel is, in this case 20 degrees, and the honed edge is at a slightly wider angle, 24 degrees in this case. Ideally this gives a more durable edge and allows you to re-sharpen with just a quick hone. Even with this fact, and the compulsion I'll have to use it just because I spent $40 on it, I don't see myself using this over my pocket V-sharpener.

Very nice, but expensive

The 2100 is the top-end commercial version of the Chef's Choice electric sharpeners. According to the manufacturer (EdgeCraft) it is intended for "busy commercial kitchens." It is a bit larger (about an inch in each dimension) and heavier than the consumer models but still compact enough to leave on the counter top. The sharpening module is removable. It can be run through a dishwasher; therefore, if you sharpen a dirty knife, you can clean the sharpener. You can also purchase replacement sharpening modules. I purchased this for home use, so I will compare it to the consumer models and comment on the price. The 2100 uses a 3-stage sharpening system. The first two stages use diamond abrasives and the third stage uses flexible stropping disks. You can achieve several edge configurations by using or skipping certain stages. There is good information available on the Chef's Choice Web site ([...]) that I won't repeat here. The sharpening unit itself appears to be about the same size as the consumer versions. The sharpening stages are like those on the M120 consumer model. Both have 2 sharpening stages and a stropping stage. (By comparison, the M130 has one sharpening stage, a stropping stage, and a steeling stage.) The 2100, like the other Chef's Choice sharpeners does a very good job of sharpening knives. In terms of results, you just can't beat manual sharpening -- that is, if you have the right equipment, you know how to use it, and you do use it. I have a good manual sharpening system, but it is a bit time consuming to set up, so I tend to do it only when I have several knives that need sharpening. The result is that at any given time, I may pick up a knife that is not quite as sharp as I would like. With an electric sharpener on the counter top, I can give a knife a quick touch up whenever it needs it. The result is that all my knives stay very sharp all the time. The real question, I think, is whether the extra cost is justified for home use. Roughly speaking, the 2100 is four times the price of the M120 or M130. In fact, the cost of a replacement sharpening module for the 2100 is only slightly less than the cost of a new M120. I expect that the abrasives in the consumer units should last about as well as the sharpening module in the 2100, which is rated at 5000 sharpening cycles. If you sharpen 20 knives a week, that's about 5 years. I'd guess most people are more likely to sharpen 5-10 knives (or less) per week. That translates to 10-20 years. From an economic standpoint, it makes better sense to buy an M120 or M130 and send it back to EdgeCraft for refurbishment when the abrasives wear out or just buy a new one. Of course, there are those pesky non-economic factors. I am often willing to spend more money for something that will take more use and abuse and which is likely to last at least as long as I will. I am very happy with the 2100 as long as I don't think about how much I paid for it.

Although steels often are touted as sharpening tools, few actually sharpen knife blades, but they do perform the vital task of realigning, or resetting, edges, which bend when contacting a cutting surface or other hard object. Because this tool's rod contains microcrystalline diamonds bonded with nickel to an oval steel shaft it's hard enough to somewhat sharpen a blade. Using this steel won't replace a professional sharpening job, which proceeds from coarse grinding to ever-finer grinding at tightly controlled angles. However, it will lengthen intervals between sharpenings better than a steel without diamonds because it accomplishes the final task of a professional sharpening, which is polishing the edge with its 600-grit mesh to a fine point. The rule is that a steel should be at least as long as the knife blade being drawn across it and this steel's 4-3/4-inch rod is short for most household knives. But, because it's 3/4-inch wide, it compensates somewhat in width for length. (Overall the tool is 10-1/2 inches long.) Best Tool for Quick Sharpening

I have the smaller version of the this sharpener which has finally worn down after 10 years. Now I use this new sharpener for initial honing and my worn one for a final fine edge. The sharpener works very well on good kitchen knives. It is a bit rough at first but after while it will give a good smooth edge finish.

Excellent Sharpener

This product was recommended by cutlery whole sale dealer based on it "high quality". Well, they were right, the quality of the finish is superb and it produces a great edge. The medium 600 grit produces results like a soft Arkansas oil stone. The finish it leaves is very similar to the Soft Arkansas stone when examined under a 10X loupe. The diamond cuts with very light strokes and doesn't care if it is sharpening softer carbon blades or the newer hard stainless blades of quality manufactures such as Case or Buck. I have used this sharpener for years with great results. It even sharpens the razor blades in my utility knives as fast as changing the blade. This is really a top quality product that really works.

I cut meat for our local grocery store and know the importance of having a really sharp knife. I was told about the Diamond sharpening steel by a coworker that had gotten his at "Kiss The Cook" he paid $30 plus for his. Being on a tight budget right now due to rising gas prices I wasn't able to go and buy the one he was telling me about so I searched amazon. I found this sharpener/steel and decided to try it. This item arrived today and immediately got out my work knives. The were super sharp in no time and it didn't take much effort on my part at all. My arms will not get as sore now that I have the ability to keep my knives sharp. This sharpener is highly recommended.

I have used these for years in the kitchen and also for elk and deer hunting. The sharpener is small enough that you can carry it in the field when hunting and it also stores easily in the kitchen. I use only high quality knives and this sharpener keeps them razor sharp. I would recommend this to anyone who knows how to use a sharpening steel. Lives up to its hype

Cook's Illustrated rated this sharpening steel as the best, and I think they're absolutely correct! I have used this steel regularly for the past year or two, and my knives have never come close to staying this sharp before... It's awesome!

Finally, I have sharp knives again.

After months upon months of researching reviews and articles on every knife sharpener and method to keep kitchen knives sharp, I happened upon a review for diamond steels that made sense to me. Again, more research to determine any differences among diamond steels -- other than price. I chose this Ultimate Edge Model 10W . . . and I'm very happy with my selection. My Wusthof knives have an easily-achieved, very sharp edge again. Since I was already comfortable using a steel, switching to a diamond steel was easy. Albeit, I do use the diamond steel more slowly, keeping my knife blade at the recommended angle, and I use it only when necessary. I still use my regular steel whenever I pick up a knife to do a cutting task. The only -- minor -- concern I have is that this diamond steel has a plastic handle that may not last for many years, although it seems sturdy. Bottom line, this is a relatively inexpensive way to sharpen my knives without the damage that a bad electric sharpener can do. I'm pleased and would recommend using a diamond steel to anyone with expensive knives and concerns about keeping them sharp.

After years of using my Chicago Cutlery sharpening steel I just couldn't keep a good edge on the knives any more. This sharpener quickly got the knives back in shape to where I can just dress them with the steel again. The abrasive is adhered to a ferrous material so I can hang it on my magnetic knife holder. I wouldn't use this as my only sharpener - you really want to finish with a finer grit.

There isn't much you can say about a sharpening steel. It sharpens well, and is extremely fine for keeping already sharp blades at their sharpest. The handle is ugly gray plastic, but it seems solidly put together, and is easy to work with.

My son is apprenticing under the tutelage of a butcher, and his mentor recommended an oval sharpener. My son says it works well for sharpening the knives he uses during his workday.

Keeps your knives sharp

This steel is terrific for keeping a keen edge on my knives. I have a really good electric sharpener, but find I only have to use it about once a year. It's not only the diamond finish on this steel, but the oval shape that is so important. Unlike a regular steel that is only good for realigning an edge, this one actually sharpens. I don't use it every time--maybe once a month and 15 passes on each side is generally enough to give me a razor sharp edge. I can't imagine that the vastly more expensive steels offered could do a better job than this one. Highly recommended.

Just as sharp as you start with

This is an excellent tool. However you need to start with a nearly perfect blade. If you start with an unsharp blade this fine tool will be unable to help. You should use a regular steel or even better a more coarse sharpening stone/steel then follow by this for final honing. It does give a really fine edge to knives and the few that are sharp enough to take it in my house really show a difference in use against typically difficult items like mincing really fine onion.

works well but poorly built

First the good....this rod keeps my edges like razors. The bad.... I was somewhat disappointed with the quality of the materials used in construction....everything from the plastic used in the handle to the grit itself. The entire piece just feels flimsy in your hand and i feel like if it slipped away from me and hit a hard floor it might break. The abrasive surface does an excellent job on my blades but for what little I use this piece, I already feel like it is wearing out and don't expect this tool to last long. And no...I don't abuse it when I use it. I don't want to be too negative. This rod does do a good job, there just might be better out there. It looks a little out of place in a block of high quality blades and will probably wear out sooner than you wish.

This "knife sharpener" does not sharpen knives. After reading and following the instructions, I tried it on several knives. It leaves the knives much less sharp than they were before being "sharpened". The product is completely unacceptable. It creates a "burr" on the edge, which then folds over immediately the first time it touches anything. The product description is plainly false. I owned an old Chef's Choice sharpener, a model 110. That unit wore out after ten or so years of infrequent use. This unit was to replace that one. I will instead just keep a pair of Crock Sticks that I have had since I was a Boy Scout, and an old-fashioned grinding wheel.
